A Glimpse of My Paleo Diet for MS

Over the past few weeks and months I have shared my journey down the Paleo path. I have heard from some of you that you would like to know about recipes and what I eat in a day, so here is a little glimpse.

Breakfast usually consists of a 3 egg spinach omelet with 3 or 4 pieces of baked bacon and some hot water with lemon, maple syrup and ginger in it. This is a quick blast of protein, water and dark greens. I usually make a water in a to go cup after I have finished eating to continue with the fluid intake on the road. Eating this breakfast usually keeps me full for a few hours.

Snacking before lunch can be tough so I try to pack a ziploc full of mixed nuts or berries. Trying to avoid dried fruits can be tough but they are high in sugar. Kale chips are another great snack but they take a while to make and I usually eat most of them right away!

For lunch I try to eat leftovers from whatever was for dinner last night. Some of my options lately have been avocado chicken with spaghetti squash, spinach meatloaf and steak.  Usually for sides I have acorn squash, sweet potatoes or peas and carrots.

Dinner is something I look forward to all day! Since going Paleo, dinner has become an event around my house. We love trying new recipes and seeing how they come out and then tweaking them one way or another. I have mastered the meatloaf and tweaked it to perfection, but tonight we will be having lemon and artichoke chicken. I always try to make enough dinner so that I have plenty left over for lunch the next day.

Invest in a good Paleo book like Practical Paleo by Diane Sanfilippo (see link to the right) as your guide to getting started it is very user friendly and I’ve yet to make a bad recipe, even baked beats and fennel was good! Recently I have added to my cook book library including paleo bread, which is great! “Paleo Lunches on the Go” seems promising too.  Do a web search for paleo recipes and you will come up with a zillion sites and recipes. On Facebook you can also find paleo diet bloggers with daily recipes. Fight on!!

Hi Donn!

You seem to be doing great on Paleo. Just wanted to throw out a suggestion if you are still experiencing MS symptoms and would like to see if you could feel even better. Try cutting out eggs. I know! I know! HUGE part of your daily menu and all those on the Paleo diet. For me, they send my body into an inflammatory response, like a more exaggerated nightshades reaction. I cut them out when I cut out gluten, sugar, yeast, and dairy. There is an MS diet theory that those 5 are the main culprits in causing inflammation. But gluten and dairy are the main triggers with eggs being on the lesser end. Just wanted to share what has been true for me! Best, Emily
